Street-Style Corn Bowls

Ingredients:
1 cup huitlacoche
4 cups corn
1 Tbsp. vegetable oil
¼ cup mayo or crema
1 cup cotija or feta cheese
2 limes, juiced
1 tsp. hot sauce
2 Tbsp. chopped chives
Salt

Directions:
Lightly salt huitlacoche 15 to 30 minutes before cooking.
Sauté huitlacoche and corn in oil until lightly caramelized.
Portion into bowls.
Top with mayo or crema, cheese, lime juice, hot sauce, chives, and salt to taste.
