Simple Huitlacoche Rice
(4 side servings)
Ingredients:
¼ onion, chopped
1 garlic clove, chopped
1 Tbsp. olive oil
1 cup white rice
¼ cup huitlacoche
2 cups vegetable stock
Salt
Pepper
Directions:
Sauté onion and garlic in olive oil over medium-low heat onion is softened but not browned.
Add rice and huitlacoche.
Add vegetable stock and salt.
Cover and cook for about 20 minutes, until all liquid has been absorbed. Fluff with a fork before serving.
