Fresh Corn and Huitlacoche Salsa
Ingredients:
1 cup huitlacoche, salted
1 Tbsp. vegetable oil
1 1/2 cups corn
½ cup diced tomato
¼ cup diced red onion
2 Tbsp. chopped cilantro
1 Tbsp. lime juice
1 Tbsp. olive oil
Salt
Pepper
Directions:
Sauté huitlacoche in vegetable oil over medium-low heat until fragrant.
Let cool completely.
Combine corn, tomato, onion, and cilantro.
Stir in huitlacoche, lime juice, and olive oil.
Season with salt and pepper to taste.
Serve with tortilla chips.
