Silky Cream of Huitlacoche Soup

(makes 4 bowls)

Ingredients:
½ onion, roughly chopped
2 garlic cloves, roughly chopped
½ tsp. dried thyme
4 Tbsp. butter
2 cups huitlacoche
1 cup fresh mushrooms, roughly chopped
4 cups vegetable stock
1 cup heavy cream
Vinegar
Salt
Pepper
2 Tbsp. chopped chives

Directions:
Salt and sauté onion, garlic, and thyme in butter over medium-low heat.
Add huitlacoche and mushrooms, and cook until softened.
Add vegetable stock and simmer for 15 minutes.
Blend until smooth.
Stir in cream.
Add a splash of vinegar.
Add salt and pepper to taste.
Top with chives.
