Classic Huitlacoche Risotto
(4 main servings)
Ingredients:
½ onion, chopped
2 garlic cloves, chopped
6 Tbsp. butter, divided
½ cup huitlacoche
2 cups Arborio rice
6 cups vegetable stock
1 cup grated Parmesan cheese
Salt
Pepper
Directions:
Sauté onion and garlic in 2 Tbsp. butter over medium-low heat until softened but not browned.
Add the huitlacoche and sauté gently for 3-5 minutes, until it releases moisture and concentrates slightly. Season lightly with salt.
Add rice and toast lightly in the fat and huitlacoche mixture.
Add vegetable stock gradually while stirring.
Finish with Parmesan and remaining 4 Tbsp. butter.
Season with salt and pepper to taste.
