Huitlacoche and Caramelized Shallot Scones
(makes 8)
Ingredients:
1 1/2 cups flour
¼ cup sugar
1/2 Tbsp. baking powder
1/2 tsp. salt
6 Tbsp. cold butter, diced
⅓ cup heavy cream
1 egg (plus 1 egg for wash)
¾ cup sautéed huitlacoche
2 shallots, finely diced and caramelized
½ cup shredded Parmesan cheese
Directions:
Heat the oven to 350°F.
Mix flour, sugar, baking powder, and salt.
Cut in butter until crumbly.
Add cream and egg, and mix just to combine.
Fold in huitlacoche, shallots, and cheese.
Form 8 rounds on a parchment paper-lined baking sheet.
Brush with egg wash.
Bake for 25 to 30 minutes until golden brown.
